Directions:
Place the water, lemongrass, kaffir lime leaves, and galangal or ginger in a medium-sized pot on medium heat.
Bring to a simmer, lower the heat and cook for 5-10 minutes, until the broth is fragrant. Remove the lemongrass and ginger from the pot. Add the onion, carrot, tomato, and mushrooms and simmer until the vegetables are tender, about 4-6 minutes.
Add the curry paste, coconut sugar, coconut aminos (if using), lime juice, coconut milk, spring onions, cilantro, and sea salt (if using) to taste. Stir until evenly mixed. Simmer for 3-4 minutes, then take off the heat.
Serve immediately with cilantro on top.
