Strawberry Pineapple Parfait
This colorful parfait layers creamy banana-pineapple soft serve with fresh strawberries for a tropical treat you and your family can enjoy anytime.
Strawberry Pineapple Parfait
Ingredients:
- 2 frozen bananas
- 1 cup fresh or frozen chopped pineapple
- 1-2 tbsps water (purified or spring) or coconut water (optional), if needed to blend
- 1 ½ cups diced strawberries
- 2 tbsps dried mulberries
- 1-2 tsps raw honey or pure maple syrup (optional)
Directions:
Add the frozen bananas and pineapple to a food processor or high-speed blender and process until smooth and creamy with a soft- serve consistency, adding a small amount of water or coconut water, 1 tablespoon at a time, if needed to help blend.
Pour a layer of the banana-pineapple mixture into two jars or bowls. Add a layer of diced strawberries. Repeat with another layer of the banana-pineapple mixture and another layer of strawberries.
Top with dried mulberries for a light crunch, and drizzle raw honey or pure maple syrup over the top just before serving, if desired.

Recipe Notes
- If using frozen pineapple instead of fresh, the result will be thicker and more ice cream-like. Fresh pineapple creates a slightly thinner consistency.
- The parfait is best served immediately after assembling for optimal consistency and presentation. The layers will soften and blend together if left to sit.
- Avoid coconut water that is pink or red, which means it has gone off and is rancid. Also avoid any coconut water that contains natural flavors, citric acid, or sweeteners such as agave nectar or refined cane sugar.
- If you prefer the parfait to be 100 percent raw, choose raw honey instead of pure maple syrup.
