Sesame Cucumber Noodles
Fresh, light, and tasty, these Sesame Cucumber Noodles are a pleasure to eat. The cucumbers provide deep cellular hydration while the dressing and sesame seeds bring wonderful flavor and a hint of nuttiness to this simple recipe.

Sesame Cucumber Noodles
Ingredients:
- 3 medium cucumbers, spiralized
- 2 medium carrots, julienned or spiralized
- ¼ cup loosely packed cilantro leaves, finely chopped
Dressing:
- 1 tbsp sesame seeds
- 3 tbsps freshly squeezed lemon or lime juice
- 2 tbsps raw honey
- 1 tsp finely grated fresh ginger or ½ tsp ginger powder
- 1 garlic clove, finely grated
- ¼ tsp cayenne or red pepper flakes (optional)
Directions:
Add all the dressing ingredients to a large bowl and whisk together until smooth and combined.
Add the cucumbers, carrots, and cilantro to the bowl. Toss until evenly coated.
Divide between two bowls and serve immediately.
Tips:
- English cucumbers are the best cucumbers for spiralizing into noodles because of their small seeds, but any type of cucumber can be used.
