Directions:
Place the potatoes in steamer or colander set over a pan of boiling water. Cover with a lid and steam for 20 minutes or until tender when pierced with a fork. Remove and cool completely.
Add the potatoes to a mixing bowl and mash with a potato masher until lump-free.
Add the garlic powder, onion powder, paprika, dill, and spring onion to the bowl and stir until evenly mixed.
Heat a non-stick ceramic waffle machine to high heat. Add the mashed potato mixture until the base of the waffle machine is evenly covered, then close the machine and cook until the waffle is crispy, about 10-15 minutes. Repeat with rest of the mixture.
To make the mushrooms, heat a non-stick ceramic skillet to medium-high heat and add the mushrooms together with a bit of water to prevent sticking. Cook for 5-6 minutes, until the mushrooms are soft, then remove from heat and stir in herbs and lemon juice.
Serve waffles with desired toppings, such as the mushrooms, thinly sliced cucumber, spring onions, cherry tomatoes and hot sauce. Alternatively, you can use the waffles like bread to make sandwiches.
