Rosemary Guacamole
This creamy and delicious guacamole is infused with the incredible flavor and aroma of fresh rosemary, making it a fun variation on traditional guacamole. Serve it up with a platter of vegetable crudités, your favorite gluten-free and corn-free crackers or chips, and/or baked potato fries, or add a scoop on top of your salad or vegetable dishes.
Rosemary inhibits and repels pathogens of all kinds. The naturally occurring fragrance from this aromatic herb travels through the entire body via the bloodstream. It even has the ability to cross the blood-brain barrier into the cerebrospinal fluid. Rosemary is a weapon the immune system can use to battle antibiotic-resistant strains of bacteria and antiviral medication–resistant viruses.
Rosemary Guacamole
Ingredients:
- 2 ripe avocados, peeled and pitted
- 1 ½ tbsps finely chopped rosemary
- 2-3 tbsps freshly squeezed lime juice or lemon juice, to taste
- ¼ cup finely chopped sweet onion
- 1 garlic clove, finely minced
- ¼ cup loosely packed cilantro, roughly chopped (optional)
- ¼ tsp sea salt (optional)
- ¼ cup diced tomato, to serve
Directions:
Add the avocados, rosemary, lime juice, onion, garlic, cilantro (if using), and sea salt (if using) to a deep plate or bowl. Mash, using a fork, until the avocado is almost fully mashed. Taste and adjust saltiness and sourness if needed.
Place in a serving bowl and top with diced tomato. Serve immediately or refrigerate until needed.
Serves 2
Recipe Notes:
- Freshly squeezed lime juice works particularly well in this recipe. Lemon juice can be used if preferred.
- While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may wish to reduce or exclude the salt.
