Rose Hip, Thyme, & Raw Honey Iced Tea

This refreshing iced tea is more than just a delicious drink. It’s true healing plant medicine, unlike some other plant medicines touted to be beneficial. The fresh lemon juice and raw honey in this recipe activate the bioavailable form of vitamin C naturally found in rose hips, making it even more healing. Like rose hips, thyme is a wild food, and this recipe’s combination of these two wild food powerhouses delivers you potent antiviral and antibacterial properties, along with their many other healing benefits.

Rose hips are extraordinary for alleviating UTIs—much more powerful at the job than cranberries—and for healing skin conditions. They also have a higher ratio of antioxidants than most healing foods, and contain a wide variety of antioxidants (many of which are still undiscovered) in addition to vitamin C.

Rose Hip, Thyme, & Raw Honey Iced Tea

Ingredients:

  • ¼ cup dried rose hips
  • ¾ cup loosely packed fresh thyme
  • 4 cups hot water (purified or spring)
  • 3-4 tbsps raw honey, to taste
  • 1-2 cups ice

Directions:

Place the rose hips and thyme in a teapot or jug and pour hot water on top. Set aside until the tea has cooled to room temperature. Remove the tea bags and stir in raw honey.

Divide the ice cubes between serving glasses and top with cooled tea. Serve immediately.
