Two of the most beloved foods come together in this comforting recipe. You’ll enjoy many of the star flavors of pizza and fries but in a truly clean and nourishing way that will promote health and vitality, rather than diminish it. This recipe can be enjoyed completely fat-free or include a few chopped olives for a punch of salty richness while still keeping the meal very low in fat. Either way, this recipe is delicious.

Potatoes create an easy, sustainable form of glucose that helps stabilize adrenals, feeds the nervous system, restores glycogen in the brain, and is antiviral and antibacterial.

Tomatoes are high in a very absorbable, assimilable form of vitamin C.

Onions contain sulfur that makes them wonderful for helping with joint pain, degeneration, discomfort, and for repairing tendons and connective tissue.

Pizza Fries

Ingredients:

  • 2 lbs potatoes, crinkle cut
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp sea salt (optional)
  • 2 button mushrooms, very thinly sliced (optional)
  • ¼ red onion, thinly sliced
  • 2-3 botija olives, roughly chopped (optional)
  • 2 cherry or plum tomatoes, very thinly sliced
  • 4-5 fresh basil leaves, to serve

Marinara:

  • 1 cup jarred diced tomato
  • 2-3 basil leaves, torn into small pieces
  • 1 tsp fresh or dried oregano
  • ½ tsp finely grated garlic
  • ¼ tsp sea salt (optional)

Cheese sauce:

  • 1 cup small cauliflower florets or diced potato
  • ¼ cup diced potato
  • 1 tbsp onion powder
  • ½ tsp sea salt (optional)
  • 1 tbsp freshly squeezed lemon juice
  • 1-2 tbsp water, if needed to blend

Directions:

Preheat oven to 400°F/200°C. Line a large baking tray with parchment paper.

Prepare the crinkle-cut potatoes by tossing them with paprika, dried oregano, and optional sea salt. Spread the seasoned potatoes in a single layer on a large baking sheet. Bake in the preheated oven for about 30 to 35 minutes, or until they are crispy and golden brown, turning once halfway through.

While the potatoes are baking, prepare the marinara sauce. In a small bowl, combine the jarred diced tomato, fresh basil, oregano, finely grated garlic, and sea salt if using. Mix well and set aside.

For the cheese sauce, add 3 inches of water to a medium pot and insert a steaming basket. Place the cauliflower florets and diced potato in the basket, cover, and steam for about 10 to 15 minutes, or until tender. Remove from heat and transfer the steamed vegetables to a blender. Add onion powder, freshly squeezed lemon juice and sea salt (if using). Blend until smooth, adding a bit of water if needed.

Once the potatoes are roasted, remove them from the oven and place in a small or medium-sized baking dish. Spread a thin layer of marinara sauce over the fries. Top with cherry tomatoes, button mushrooms (if using), red onion, chopped botija olives (if using). Spoon the cheese sauce over the top of the fries.

Return the loaded fries to the oven and bake for an additional 5 to 7 minutes, or until the cheese sauce is heated through.

Remove from the oven and garnish with fresh basil leaves. Serve immediately. Enjoy!
