Pea Guacamole
No need to go without your beloved guac when you’re lowering radical (overt) fats to help yourself heal. Enjoy this version free from radical fats and made with peas instead! This recipe mimics the look and flavors of guacamole and is just as hearty and comforting. This is a great dip to have on regular rotation to add to lunches, dinners, and snacks, for both you and your family.
Green peas have the ability to bring back hair follicles, and to restore hair growth. The chlorophyll in peas is vastly different from chlorophyll in many other vegetables and herbs, because green peas’ chlorophyll contains follicle-stimulating enzymes that stimulate and revitalize weakened hair follicles. The pea plant also has a wide variety of trace minerals, which contributes to new hair growth.
Pea Guacamole
Ingredients:
- 2 cups frozen or fresh shelled green peas
- ¼ cup freshly squeezed lime juice
- 1 garlic clove, minced
- 2 tsps finely chopped ripe jalapeño
- ¼ tsp ground cumin
- ¼ tsp ground coriander
- ½ tsp sea salt (optional)
- ⅓ cup chopped tomato or grape tomato
- ¼ cup chopped onion, any color
- ¼ cup loosely packed cilantro, chopped
Directions:
If using frozen green peas, place them in a sieve or colander and run under warm water until defrosted.
Steam the thawed or fresh peas for 3 to 4 minutes, until tender. Remove and rinse under cold water, until cool to the touch.
Place the peas, lime juice, garlic, jalapeño, cumin, coriander, and sea salt (if using) in a food processor. Process for 1 to 2 minutes, until smooth.
Transfer to a bowl and stir in the tomato, onion, and cilantro.
Serve immediately or refrigerate until needed.
Serves 2
Recipe Notes:
- Look for organic peas whenever possible.
- While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may wish to reduce or exclude the salt.
