Millet Sushi
These simple and tasty sushi rolls are made with millet and fresh fillings, their flavor elevated by marinated ginger and wasabi. Enjoy these sushi rolls as part of a meal or for a snack.

Millet Sushi
Ingredients:
Sushi:
- 1 cup millet
- 2 cups water
- 2-3 nori sheets
- 1 cup julienned cucumber
- 1 cup julienned carrots
- 1 cup thinly sliced red cabbage
Marinated ginger:
- 2 tbsps freshly squeezed orange or lemon juice
- 1 tsp raw honey
- 1-inch piece of ginger, peeled and very thinly sliced
Wasabi:
- 1 tsp wasabi powder
- 1-2 tbsps water
Directions:
To make the marinated ginger, combine the orange or lemon juice and raw honey in a small bowl and whisk until well combined. Add the thinly sliced ginger and submerge in the liquid. Set aside for at least 1 hour to marinate.
Combine the millet and water in a small saucepan. Cover and simmer for 10 to 15 minutes until the millet is cooked. Remove from the heat and cool completely.
Place one sheet of nori on a cutting board, long edge facing you. Scoop about 3⁄4 cup of millet onto the end of the nori sheet closest to you and spread it over the sheet in an even layer, leaving about a 1-inch border at the top of the sheet. Arrange the fillings on the middle section of the millet layer.
Carefully lift the nori from the bottom edge close to you and begin rolling it tightly toward the top. Just before finishing the roll, dip your finger in the ginger marinade and run it along the top edge of the sheet. Using a sharp knife, slice each sushi roll into even pieces. Repeat with the remaining ingredients.
Mix the wasabi powder and water until you get a smooth paste.
Serve the millet sushi immediately with the wasabi and marinated ginger.
Tips:
- You can make extra marinated ginger to add to meals if you wish, such as salads, steamed vegetables, or stir-fries. You can store the marinated ginger in an airtight container in the fridge for up to a week.
