Kiwi Sorbet
With just two or three ingredients, this sorbet couldn’t be simpler. It lets the delicious natural flavor of kiwis speak for itself and is an incredibly refreshing snack. Green kiwis or gold kiwis both work equally well in this recipe, or you can use a mix of both. Green kiwis are more tangy, whereas gold kiwis have a smoother sweetness.
Kiwis are a very supportive food for diabetes, hypoglycemia, and hyperglycemia. Whether your blood sugar levels are too low or too high, eating this fruit will bring you back to center as it simultaneously lowers fat in the bloodstream.
Ingredients:
- 6 large ripe green or gold kiwis
- 3 tbsps freshly squeezed lime juice or coconut water, or more if needed
- 2-3 tbsps pure maple syrup (optional, for added sweetness)
Directions:
Peel and thinly slice the kiwis. Line a baking tray with parchment paper and arrange the kiwi slices on top in a single layer. Freeze for at least 4 hours, best overnight.
In a food processor, combine the frozen kiwi slices with lime juice or coconut water and maple syrup (if using). Process at high speed for 1 to 2 minutes, scraping down the sides as needed, until you get a smooth sorbet.
Serve immediately or freeze in an airtight container for a firmer consistency.
