Jalapeño Potato Poppers
These little spicy potato poppers are the perfect appetizer, snack, or finger food to share with family or friends. They are fun to eat and vibrant in color thanks to the paprika coating. This recipe is fat-free and baked rather than fried, making it a truly healthy choice for a fun finger food.
There is a mistaken belief that potatoes cause health issues, when really it’s other ingredients served with them that do. The truth is, it’s the toxic oil that potatoes are often fried in, the cheese sauce ladled on top, and the butter, milk, and cream mashed in that have the world convinced that potatoes are bad for us. This recipe excludes all these problematic foods and keeps the potatoes the star of the show.
Jalapeño Potato Poppers
Ingredients:
- 2 lbs potatoes, peeled and roughly chopped
- 2 tbsp finely chopped ripe Jalapeños or 1/2 tsp chipotle powder
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp sea salt (optional)
- 3-4 tbsp paprika
Directions:
Preheat oven to 350F/180C. Line a large baking sheet with parchment paper. Steam the potatoes in a steamer for 15-20 minutes, until tender. Remove and set aside for 10 minutes until cooled.
Place the potatoes in a medium-sized mixing bowl together with the Jalapeños or chipotle powder, garlic powder, onion powder, and sea salt (if using). Mash with a potato masher until smooth.
Using a tablespoon measurer, scoop out the dough and shape into balls. Roll in paprika to coat and place on the baking sheet. Repeat with remaining dough.
Bake for 15-20 minutes, until firmed up. Remove from oven and serve immediately.
