Guacamole Salad

This fresh salad captures all the flavors of guacamole with creamy avocado, fresh herbs, juicy tomato, sweet bell pepper, and zesty lime. Cumin and a touch of raw honey add warmth and a hint of sweetness to the crunchy greens.

Guacamole Salad

Ingredients:

  • 1 tsp raw honey (or 100% Pure Maple Syrup)
  • 2 tbsps freshly squeezed lime juice, more to taste
  • 1⁄4 tsp ground cumin
  • 1 1⁄2 cups halved cherry tomatoes
  • 1 cup diced red bell pepper
  • 1⁄4 cup finely chopped red onion
  • 4 cups tightly packed chopped romaine lettuce
  • 1 tbsp finely chopped fresh ripe jalapeño (not green) (optional)
  • 1 cup tightly packed fresh cilantro leaves, chopped
  • 1 1⁄2 cups chopped ripe avocados (about 2 large avocados)
  • Sea salt, to taste (optional)
  • Freshly ground black pepper, to taste (optional)

Directions:

Whisk the raw honey (or 100% Pure Maple Syrup), freshly squeezed lime juice, and ground cumin together in a large salad bowl until smooth, adjusting with more lime juice if needed.

Add the cherry tomatoes, red bell pepper, red onion, romaine lettuce, jalapeño (if using), and cilantro to the bowl all at once. Toss until the salad ingredients are evenly coated with the dressing.

Gently fold in the chopped avocados, mixing just enough to combine while keeping the pieces intact.

Season with sea salt (if using) and black pepper (if using) to taste, toss once more, and serve immediately.

Serves 2-4

Tips:

  • Choose ripe avocados that yield slightly to gentle pressure yet still have some firmness. This ensures they’re creamy yet still hold their shape when folded into the salad.
  • The best type of avocado for this recipe is a creamy variety, such as Hass.
  • This salad is best served immediately after assembling, as the avocado will oxidize and the lettuce will wilt over time.
  • For a milder flavor, remove the seeds from the jalapeño before chopping. For more heat, leave some seeds in.
  • Look for ripe jalapeños that are not green.
  • Although the lime juice in the dressing helps prevent the avocado browning, serve promptly for the freshest color and flavor.
  • If you prefer the recipe to be 100 percent raw, choose raw honey instead of pure maple syrup in the dressing.
  • Sea salt and pepper are optional inclusions; the recipe is more healing without them.
