Greek-Style Loaded Hummus
What’s better than a delicious creamy hummus? Loaded creamy hummus! Topped with Greek-inspired fixings, such as cucumber, tomato, onion, fresh and dried herbs, and olives, this wonderful dip is packed with flavor, making it a fun and elevated alternative to plain hummus. Enjoy with vegetable crudités and crackers such as these Rosemary Cassava Crackers.
Cucumbers strengthen the adrenals and kidneys.
Tomatoes strengthen the thyroid’s radio-like frequencies, helping to create balance and homeostasis with all of the body’s organs and glands.
Onions are high in the trace minerals zinc, manganese, iodine, and selenium, and help rejuvenate the skin and protect the lungs.
Greek-Style Loaded Hummus
Ingredients:
- 3 tbsps tahini
- 2-3 tbsps freshly squeezed lemon juice
- ¼-½ cup water, to desired thickness
- 1 garlic clove
- ½ Medjool date
- 1 15-oz can of chickpeas, drained or 1 ½ cups cooked chickpeas
- ½ tsp sea salt (optional), more to taste
Toppings:
- ½ tsp paprika
- ½ tsp dried oregano
- ¼ cup diced cucumber
- ¼ cup chopped cherry tomatoes
- 2 tbsps finely chopped red onion
- 2 tbsps finely chopped parsley
- 2-3 Botija olives, pitted and chopped (optional)
- 1-2 tsp lemon zest
- 1-2 tsp freshly squeezed lemon juice
Directions:
To make the hummus, combine the tahini, lemon juice, water, garlic, and date in a high-speed blender. Blend until smooth and frothy. Add the chickpeas and sea salt (if using) and blend again for 2 to 3 minutes, or until the hummus is very smooth. Add more water if needed to reach desired consistency.
Spread the hummus on a large plate or bowl with low edges. Sprinkle paprika and dried oregano on top, then add the rest of the toppings. Finish with a squeeze of lemon juice.
Serve immediately. Enjoy!
