Falafel Waffles
These savory waffles are cooked until golden and topped with a naturally creamy pureed cauliflower sauce. Cherry tomatoes and cucumber add freshness and juiciness.

Falafel Waffles
Ingredients:
- 1 lb potatoes, diced
- ¾ cup cooked chickpeas
- 3 tbsps chickpea flour
- ¼ cup loosely packed fresh parsley and/ or cilantro leaves, roughly chopped, plus more to serve
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- 1 tsp freshly squeezed lemon juice
- 1 tsp pure maple syrup
- 1 cup roughly chopped cherry tomatoes and/or sliced cucumber, to serve
- ½ tsp red pepper flakes (optional), to serve
Cauliflower sauce:
- 2 cups cauliflower florets
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp paprika
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp water or 3 tbsps unsweetened almond or coconut milk, more if needed
Directions:
Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 20 minutes until the potatoes are tender when pierced with a fork. Remove and cool completely.
Add the potatoes to a large bowl together with the chickpeas, chickpea flour, parsley or cilantro, cumin, coriander, garlic powder, lemon juice, and maple syrup. Mash with a potato masher until combined and lump-free.
Heat a ceramic nonstick waffle machine to high heat. Place the mash onto the base of the waffle machine, making sure the base is evenly covered; then close the machine and cook until the waffle is crispy, 10 to 15 minutes. Repeat with the remaining mash.
To make the sauce, steam the cauliflower florets for 4 to 8 minutes until tender. Place in a blender or food processor together with the garlic powder, onion powder, paprika, lemon juice, and water or almond or coconut milk. Blend until smooth. Serve the waffles immediately with the sauce, cherry tomatoes, cucumber, red pepper flakes (if using), and fresh cilantro.
Tips:
- For a creamier and more indulgent recipe, make the cauliflower sauce with the almond or coconut milk option. For a fat-free recipe, use water only in the sauce.
