The messages out there about eggs can get confusing. We often hear that they’re a healthy food—a perfect food, even—and a well-balanced source of protein. The truth is that long before pathogens such as unproductive viruses, bacteria, and even funguses invaded our bodies and created our current culture of chronic illness as the new normal, eggs were a survival food. While they weren’t good for us, they at least weren’t detrimental to our health—before the explosion of viruses and other bugs.
