Date Energy Bars
These scrumptious date bars are so easy to make and are a perfect snack to give you a boost of energy. They’re a great option to grab and go when you and your children are running out the door or to keep you fueled on busy days. You can enjoy these bars with the coconut or use gluten-free oats for a radical (overt) fat-free alternative. Either way, they are delicious.
Dates are powerful for the digestive system. As one of the most anti-parasitical foods on the planet, dates bind onto, destroy, and sweep away intestinal parasites that are easy to reach, as well as yeast, mold, and other fungus; heavy metals from recent exposure; unproductive bacteria; viruses; and other poisonous pathogens that are not deeply rooted in the gut.
Date Energy Bars
Ingredients:
- 2 cups tightly packed pitted Medjool dates
- 1 cup dried mulberries, any color
- 1 cup shredded coconut or ⅔ cup gluten-free rolled oats
- ½ cup dried wild blueberries (optional)
Directions:
Add the pitted dates to a food processor and pulse briefly until they break down into a soft, crumbly consistency. Add the dried mulberries and the coconut or gluten-free oats, then process again until the mixture is evenly combined and begins to stick together. Stop and scrape down the sides as needed to ensure everything is incorporated.
If using dried wild blueberries, stir them in gently by hand to preserve their shape and texture. Press the mixture firmly and evenly into a parchment-lined 8- or 9-inch square dish using your hands or the back of a spoon. Place in the fridge for at least 2 hours to set before slicing into bars and serving.
Makes about 8 bars

- Look for coconut that has only that one ingredient, without any additives.
- Look for dried wild blueberries that contain only that one ingredient, without any additives.
