With just 6 ingredients, this recipe is also simple to make. You just need to have a blow torch handy for the final finishing touch! This Creme Brûlée is dairy-free, soy-free, and gluten-free. Its creaminess comes from coconut milk and almond milk instead of dairy.
Creme Brûlée
Ingredients:
- 1 ½ cups full-fat coconut milk
- 1 cup unsweetened almond milk
- 2 tsp alcohol-free vanilla extract or vanilla bean powder
- ⅓ cup pure maple syrup
- 3 tbsp potato starch
- ¼ cup maple or coconut sugar, to finish
Directions:
Combine the coconut milk, almond milk, vanilla, maple syrup, and potato starch in a small saucepan. Whisk until uniform.
Place the saucepan on medium-high heat and cook, whisking continuously, until thick and simmering.
Divide the custard between 4 ramekins and lightly tap on the countertop to even out the surface and remove any air bubbles.
Refrigerate for at least 6 hours, best overnight.
Sprinkle maple sugar or coconut sugar on top in a thin even layer and use a blow torch to caramelize.
Serve immediately.
