Cherry Pie Compote
Ingredients:
- 3 cups (675 g; 1 ½ lbs) frozen or fresh pitted cherries
- 2 tbsps arrowroot powder
- 1 ½ tbsps lemon juice
- ½ tsp lemon zest
- ⅓ cup (80 ml) pure maple syrup
- ½ tsp cinnamon (optional)
- 1 tsp alcohol-free vanilla extract or ½ tsp vanilla powder
Directions:
Place all the ingredients in a medium-sized pot and stir until combined.
Place the pot on medium-high heat and cook, stirring often, for 10 to 15 minutes, until the cherries have softened and the sauce thickened.
Take off the heat and cool completely before pouring into jars or serving.
