Cabbage Soup
This chunky cabbage soup is so comforting. Made with humble vegetables such as cabbage, potatoes, carrot, and onion, it’s easy to pull together with ingredients many people tend to have lying around in the fridge. The healing broth brings delicious flavor, so if you can use this broth instead of water, you will enjoy a much more flavorful soup.
Green cabbage is very nutritious, wonderful for supporting the joints and helping with osteoporosis.
Carrots are a quick liver refueling source of glucose that’s attached to minerals and vitamins.
Potatoes are abundant in amino acids that specifically inhibit viral growth.
Cabbage Soup
Ingredients:
- 1 medium-sized onion, chopped
- 3 carrots, chopped
- ½ medium-sized cabbage (about 1 lb), chopped
- 3 medium-sized potatoes, chopped
- 5 cups Healing Broth or water
- 1 bay leaf
- 1 cup green peas or chopped green beans (optional)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup dill, parsley and/or chives, roughly chopped
Directions:
Place a large ceramic non-stick pot on medium heat. Add the chopped onions and carrots to the pot. Sauté for about 5 to 7 minutes, until the onions are soft and translucent, adding a bit of water if needed to prevent sticking.
Add the chopped potatoes and cabbage to the pot. Stir well to combine with the onions and carrots. Pour in the 6 cups of vegetable broth or water, add the bay leaf to the pot and bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot.
Let the soup simmer for about 20 to 25 minutes, or until the vegetables are tender. If using green peas or chopped green beans, add them to the pot. Continue to simmer for an additional 5 to 10 minutes, until the peas or beans are tender.
If using, season the soup with sea salt and freshly ground black pepper to taste. Stir in the chopped dill or chives.
Ladle the soup into bowls and serve hot. Enjoy!
