Blackberry Parfait

Directions:
To make the jam, combine the blackberries and dates in a blender. Blend until smooth, for 1 to 2 minutes at medium speed. Remove and set aside.
To make the banana ice cream, combine the frozen bananas and pure vanilla bean powder in a food processor. Process the bananas until you have a smooth, soft-serve consistency, adding water or coconut water by the tablespoon as needed.
Place a layer of banana ice cream in 2 to 3 serving glasses or jars, followed by a few dried mulberries for crunch (if using), and then a layer of blackberry jam. Repeat with remaining ice cream, jam, and mulberries (if using). Top the parfaits with fresh blackberries and a drizzle of raw honey. Serve immediately.
