Layers of sweet and luscious raw blackberry jam, creamy vanilla banana ice cream, and chewy bites of dried mulberries come together in this wonderful parfait. It’s not only gorgeous to look at but truly satisfying to eat. A sweet treat you can enjoy every day if you wish, with nothing but pure health benefits and incredible flavor. Enjoy this parfait for breakfast, as a snack, dessert, or any time of day.

Some varieties of blackberries have well over a dozen different kinds of antioxidants, many undiscovered by research and science. Some of the antioxidant varieties in blackberries head directly to the brain when entering the blood- stream. This is when the antioxidants of the blackberry can help slow down cell damage, cell decay, and cell destruction of the brain.

Blackberry Parfait

Ingredients:

Jam:

  • 2 cups blackberries
  • ⅓ cup tightly packed pitted Medjool dates

Banana ice cream:

  • 4 frozen bananas
  • ½ tsp pure vanilla bean powder
  • 3-4 tbsps water (purified or spring) or coconut water

To assemble:

  • ½ cup dried mulberries (optional)
  • ½ cup fresh blackberries
  • 2-3 tbsps raw honey

Directions:

To make the jam, combine the blackberries and dates in a blender. Blend until smooth, for 1 to 2 minutes at medium speed. Remove and set aside.

To make the banana ice cream, combine the frozen bananas and pure vanilla bean powder in a food processor. Process the bananas until you have a smooth, soft-serve consistency, adding water or coconut water by the tablespoon as needed.

Place a layer of banana ice cream in 2 to 3 serving glasses or jars, followed by a few dried mulberries for crunch (if using), and then a layer of blackberry jam. Repeat with remaining ice cream, jam, and mulberries (if using). Top the parfaits with fresh blackberries and a drizzle of raw honey. Serve immediately.

Serves 2-3

  • When buying powdered vanilla, read the label and seek out 100% pure vanilla bean powder, with no added fillers or flavors.
