This delectable Berry Bread will have your home smelling heavenly! This is a great recipe to make with your children or bake to share with family or friends. It will taste just as good as any baked treat you’d normally enjoy without containing any problematic foods such as eggs, milk, butter, refined sugar, and gluten.

Berry Bread
Ingredients:
- 3 bananas (yields about 1 ½ cups mashed)
- ⅓ cup pure maple syrup
- 1 tsp alcohol-free vanilla extract or ½ tsp pure vanilla powder
- ½ cup unsweetened almond or coconut milk
- 2 cups gluten-free oat flour
- ½ cup millet flour
- 1 tsp aluminum-free baking powder
- ¼ tsp baking soda
- 1 cup fresh or thawed frozen mixed berries, such as blackberries, raspberries, wild blueberries, and chopped strawberries
Directions:
Preheat the oven to 350°F/180°C.
Line a 9-×-5-inch loaf pan with parchment paper.
Place the bananas in a bowl and mash with a fork or potato masher. Add the maple syrup, vanilla, and almond or coconut milk. Mix well.
Combine the gluten-free oat flour, millet flour, baking powder, and baking soda in a second bowl. Whisk until lump-free. Add the wet ingredients and gently fold until you get a smooth combined batter.
Add the berries and stir very gently, just enough to incorporate them.
Pour the batter into the loaf pan and bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean. Remove from the oven and cool completely before slicing
Tips:
- If you select fresh strawberries for this recipe, remove the greens before using.
