Baked Mac & Cheese
This Baked Mac and Cheese is a perfect choice for children or adults who want a hearty and fun meal, and yet it doesn’t include any cheese, cream, milk, gluten, oil, or refined sugar. It’s fat-free and can even be grain-free if you choose a pasta made without grains such as pea, lentil, or chickpea pasta. You may wish to pair this dish with a leafy green salad for a meal.
Baked Mac & Cheese
Ingredients:
- 4 cups roughly chopped potato
- 2 cups diced carrot
- 12 oz gluten-free, corn-free or grain-free elbow pasta
- 3 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika
- ¼ tsp cayenne (optional)
- 1 ½ tbsp freshly-squeezed lemon juice
- ¾-1 tsp sea salt (optional)
Directions:
Preheat oven to 400°F/200°C.
Add 3 inches of water to a medium pot, insert a steaming basket, add the chopped potatoes and carrots, and cover. Steam for 15 to 20 minutes until tender. Cook the pasta according to package instructions, drain, and place back in the pot.
Once the potatoes and carrots are tender, remove from the heat and place in a food processor along with the onion powder, garlic powder, paprika, cayenne (if using), lemon juice, and sea salt (if using). Process until smooth. Pour the sauce onto the pasta in the pot and stir until evenly coated.
Transfer the sauced pasta to a medium-sized baking dish and smooth the top. Bake for 25 to 30 minutes until browned on top. Cool for 5 minutes before serving.
