These delicious, bite-size pinwheels made with a creamy avocado filling are a fantastic choice for a finger food to serve to family and friends or to enjoy on a picnic. Follow the recipe exactly as it is or feel free to swap out the vegetables and herbs for any other combination of ingredients you’d like. These pinwheels can be made with homemade red lentil tortillas or keep the recipe raw by using zucchini ribbons.
Avocados possess anti-inflammatory compounds that have an aspirin-like quality without thinning the blood; this reduces narrowing and swelling of the digestive tract.
Avocado Veggie Pinwheels
Ingredients:
Directions:
Make the red lentil tortillas (if using) or prepare the zucchini.
To make the filling, add the avocados, lemon juice, and sea salt (if using) to a medium-sized bowl and mash with a fork or potato masher until smooth.
Add the carrots, bell pepper, cucumber, and herbs. Mix until combined.
Spread the filling all over a tortilla or zucchini ribbon and roll up. Cut the rolled up tortilla into pinwheels. Repeat with rest of ingredients and serve immediately.
